See, Zip? We gots those, too. We're real modern out here in the STICKS. We even get service through the hills, for the most part.

Seems like there's a cell tower on every hilltop...LOL

JH - I'm not looking to rip off the ins co or to "play the game." I just want my stuff fixed that's insured & broke. Keeps my karma clean that way.

Hayden - Ya know...I got a dremmel & a whole buncha woodworking chisels, but I just never took the time to do anything with them, much. I did make this scrying table, once, just for kicks. It was round, & had the houses of the zodiac on it like a clock face. Then I took a plum tree sapling that someone had cut down & sliced it into little discs, which I carved with the symbols of the I Ching, on one side. The idea was that you drop the discs on the table & read it, somehow, except I don't know anything about that sort of thing, so it was useless to me. I gave it away & never heard if it worked or anything.

damn that sounds like a nice table! I know what you mean about not getting around to it. I like to make pseudo plans that never get done. I do less of that nowadays.

Ya gotta know better than to gimme a gimme.

I just got about 165 lbs of pork for $145. If course I had to help butcher 7 whole pigs too, but I had a good time & feel exhausted. Can't stop yet, though. Now I gotta rewrap it & either freeze it or start smoking it.

Borrowed a pretty big smoker, but I dunno if those two 25 lb hams will fit in it.

Ah, the hell with it for a moment. I've been at this since 7 this morning! I need a beer, a smoke & a break. Guess you're stuck with me for the next few minutes!

So a buncha ppl got together & bouhgt 7 pigs from the Mennonites. They co-oped the whole deal, & I got in on it through the wife. I expected to spend a day butchering, & then a day smoking, & then all would be done.

Ya know - it's a lot more involved than I originally thought it would be.

In fact, it's way more involved.

I'm gonna be working on this thing for the next week, on a daily basis, & then hanging it out under the eave of my house for a month or so, depending on the weather. Still, all in all, it's better than not having it, & I'm learning a heck of a lot.

It's just too bad that I didn't do this last Dec. It'd be done by now, except for the country ham I wanted to do. Can't do one of those now. Not enough winter left.

I am gonna experiment with some sassafras bacon, though, & hardwood & brown sugar for the other bacon. I have some mesquite for one of the hams. I think the other will be a regular hardwood one.

I need one of them injection thingies. What I really wanna do is inject one of the roasts with anise, hot stuff & corriander, & THEN smoke it with reg oak, & then cure. Tasted a ham like that once, & it was the best I ever had. Some Italian thing, more like a city ham, which is all I have time to make right now, but that's okay. I have a nice freezer.

Oh well...gotta go. I'm making lard. Never thought I'd hear myself say that...
