I have heard of Texans using OJ to do steaks, and wild game dishes as well. Grapefruit juice also. The citric acid is the key to the marinade in as much as the flavor. I like my steaks cooked outside. Charcole or oak for the fire, mesquite or hickory (or both) for the smoke to flavor the meat. Tenderise the steaks first with one of those chopper thingys. Rub in salt n pepper. Sear well on both sides then smoke it till it just stops moving. UMMMM. Yea baby. STEAK !!
Some times I'll cube the steak, slip it on a skewer with some marinaded shrimp, onion, bell pepper, and squash. Then smoke that on my ol ladys grill. Hell Yea!
