I've had some Turduckin that would just make you want to slap yo mama.
It's a coonass classic. Turkey stuffed with a duck thats been stuffed with Cajun rice.

Speakin o coonass anybody heard anything from our brother in Louiseana? Hope he's out playing sax with the new band.

Hum, that sounds good. Though I always found cornish hen to be rather bland. Perhaps rednecks dont know how to cook one properly.

Well you could always stuff the popcorn into the rice into the hen into the duck into the turkey.. then watch it all blow up at once.. 'd be quite a show..
Sorry Sans, the word Turduckin sounds kinda iffy to me.. :wink: -- kidding-- I'm sure it's good -- it just contains a word that sounds un-savory,, -lol-

I Cajun fry turkeys every year and they are great, I get friends and family together we all consume mass quantities of the beveridge of choice in the driveway I heat up 3 gallons of peanut oil to 325 degree's in a pot that comes in a kit you can get at your local supermarket or sporting goods. I fry 3 -12 to 15 pound turkeys that have been injected with Cajun spices fry them at 4 minutes per pound Yum! Yum! they'll make you slap yo pappy. If you ever do this it must be done outside with great care and must be watched constantly by someone who is kinda sober so as to keep the little ones away from the hot grease and the turkey must be COMPLETELY THAWED OUT. LOL

Love that stuff. I went to Mexico once, & was really looking forward to eating some, but although it was on the menu, they didn't have it that day. I was PISSED!

I've cooked it, myself, & it's really great meat, if you've never had it.

Only place you can get it around here is at a Jamaican grocery, & they cut it into cubes, Jamaican style, bones & fat & all. I'm still looking for a local farm or a vendor, though, cuz it's really good. Very delicate flavor, & tender, too.

Oh, and hey George: do you know of any texas marinades that involve orange juice?
Met a guy ofrom texas once that a kick butt marinade for steak. I think it had orange juice and kiwi in it, as part of it. (Pretty sure of orange juice)
He said you put it in this concoction and let it soak for a couple hours. Maybe over night in the fridge.

I marinate steaks with oj, garlic salt, fresh ground pepper, lea@perrins, a drop of honey and a drop of molasses. Yum Yum!! On the Grille (of course)-- my wife was braggin' about that recipe to the manager in an Outback resteraunt (if you can believe that ).. yup... :) Me wants steak allofasudden.. mehhhahahaha... :D

I just consumed a bowl of hot buttered popcorn and didn't leave any for no friggin' turkey. (That's the kind of culinary concoction that will give ya gas! :wink: )
