Dissonance is an important element in music, but too much of it is painful.
In one of my more recent songs, the guitar player was a little out of tune on the top E string.

I purposely chose not to recut it because the dissonance added to the feel of a sad song....but it probably wouldn't have worked on a different song. Again, there is no such thing as a perfectly tuned acoustic instrument. If you were to check the tuning of an individual instrument in almost any orchestra you'd be amazed how "off" they are, but when all the instruments play together the combined sound is pleasing. Again, that is the magic of music.
But one violin played out of tune is worse than a cat scratching your eyeballs out.
