IMO, they way I see it, It all starts with your goal and perspective. If you want to play out and just play the songs that you enjoy, then really all the audience you need is the mirror in you living room. But if you want to play out on a more consistent schedule with paying gigs, then you play what the crowd will enjoy and want to hear. Yes you can throw in a few classic/obscure songs if you can do them well, but I dont think a bar filled with 20 something and 30 something people are going to enjoy a set full of songs that only their parents may recognize....Its just a sound business decision, You target your demographic, and the bar crowd demographic is 20s to late 30s...

A cover band plays songs that people want to hear.
If you're a cover band and don't play songs folks want to hear, then don't expect to gig very often.
.
That is almost the end of the story, right there.
.
What helps is REAL lot is interacting with the audience; be ONE of the audience, talk to them.
Don't play AT them, don't talk AT them, be WITH them.
.
Be with the audience; if you can't feel their mood, then you're not a very good performer, eh?
Yeah, people like to listen to good music, but they also like to hear it from people they identify with, eh?
