Down here we boil them in a huge pot on a huge burner with new potato's and corn on the cob. First you put them in a Big ice chest they are live and crawling around. Then you fill the ice chest up with water with salt in it. you let them soak in that empty and repeat, this is called purging them to get the mud out. While the purging process is going you have the HUGE pot of water over a propane burner on high when the water starts to boiling a hard boil. Usually that is timed by drinking 2 beers. Then in goes the crayfish in the boiling water, 2 large quartered garlic, 2 large quartered onions. spices. you let that boil for appox. 2 more beers FYI if your a wus and you sip on your beer only 1 down here beer is consumed in a Guzzling manner! then in goes the new potato's and 3 inch corn on the cob and another round of secret spice let that boil for 1 more beer. Turn off propane grab a bag of ice open and throw in the crayfish water mix push the ice down a little. the Ice causes the mudbugs to really absorb the spices that way you can suck the spice out with their brains YUMMY! don't worry it ain't gross because you are now drunk and don't give a phuk! Now you consume MASS QUANTITIES of mudbugs potato and corn with more beer 1 hour later time for bed!

I never was a fan of cray creatures...but damn Jeff...You make it sound delcious! Gonna have to try that out. In fact , I'm threatening to fly down to Houston later this year ...If I do I'll look you up and well do some mudbugs and beers! :)
