Jeanette’s Deer Chili

2 pounds ground deer meat
1 large green pepper
1 large onion diced
1 large garlic clove, minced or 1/8 tsp garlic powder
1/3 cup chili powder
2 tsp. cumin
1 large can 28-ounce Ranch Style Beans
1 28-ounce can crushed tomatoes
1 6-ounce can tomato paste
¾ cup water
11/2 teaspoons salt
1 teaspoon sugar
1 bay leaf ( optional )

1. In 5-quart Dutch oven or saucepot over high heat, cook ground deer meat, green peppers, onion and garlic, stirring frequently, until all pan juices evaporates and beef is well browned, about 15 minutes.

2. Stir in chili powder and cumin, cook 1 minute, Pour in Ranch Style Beans and stir well, Stir in tomatoes with their liquid, tomato paste, water, salt, sugar, and bay leaf, over high heat, heat to boiling, Reduce heat to low, cover and simmer 45 minutes, stirring occasionally.

3. If you like chili hotter, add about ½ teaspoon ground red pepper or a few drops hot pepper sauce or to taste. Cover and simmer 15 minutes longer to blend flavors. Skim fat from chili. Discard bay leaf.

Makes about 10 servings
20 servings with double recipe.

Philby's Kill 'Em All & let God Sort 'Em Out Chili:
(these measurements are approximate)

2 lbs goat
2 lbs ground beef
2 lbs ground pork
2 lbs venison
2 lbs ground turkey
a buncha left-over chicken
1 garlic knob
2 green peppers
1 red pepper
10 or 12 jalopenos
a few other hotter pepper varieties, like lemon &/or cherry &/or hot banana or whatever
a few REALLY hot peppers, like habaneros or scotch bonnets
a cpl cans of tomatoe sauce
a buncha chili powder, paprika, salt, celantro
touch of cumin if I'm in the mood
basil, thyme, greek oregano (little chopped up bits)
5 diced onions
cpl cans of black beans
cpl cans of pinto beans
some lime juice

brown the meats while you cook the sauce materials
dump it all together
cook it for a say or two
enjoy it (while I listen to the wife complain that it's too spicy, so I serve it to her with lots of sour cream & fresh tomatoes & onions & tortilla chips & hope that shuts her up)
sweat it out!

You're missing the most important ingredient: The chili must be cooked during a football game to insure maximum flavor.

Phil I think you should call that Noah's Ark Chili. All you need is some zebra and penguin meat.

It's funny I've been hankering for chili so I made a small batch yesterday. 'Course it didn't have all dem critters in it...

I've heard the same thing about meat loaf. Usually ground beef, pork and veal if I'm not mistaken.

bob, it's food like this that keeps me mellow & calm...it's also good for cleaning out those pesky sweat glands. Everyone knows you can't lead a truly wonderful life if your sweat glands are all clogged.
