I know I expect well-known solos to be as close to the original as possible, when listening to a cover-band, otherwise I spend the next 20 seconds grumbling to myself about how I know that wasn't the solo I heard on the album lol.
Should people strive for note-for-note? I don't see why not - if you're covering in order to learn and glean that artists' nuances, then good for you! Not many cover bands go gold, so what does it really matter? Just as long as the people you're playing for enjoy it!
