Without having any documentation for your amplifiers, I would assume the reasoning of having 4 and 16 ohms settings only was in assuming you would only be using their cabinets.
IS your amplifier really a dual power amp model, or do they refer to dual outputs from a mono source to be "stereo" just because you use two speakers? If so that isn't really stereo, it is mono with left and right speakers.
If it says 8 ohms left and 8 ohms right, that is really 4 ohms when both cabinets are plugged in. The outputs would be paralleled within the amplifier.
If you plug one speaker into only one of the 8 ohm outputs, and if it works, then you do have an 8 ohm output on the amplifier. If neither of the 8 ohm outputs work with only one speaker plugged into the 8 ohm output, the amplifier is internally rewiring them in series, which would be seen as 16 ohms at the amplifier output.
