Howdy,
My Dad wants to start playing more gigs but he's always played in a band. He would like to play along to simplified backing tracks.

Removing the instruments he does not want.

I'm not totally familiar with all this stuff but to me it sounds like he needs Midi based backing tracks.

Now my Dad gets very and easily frustrated with technology. I'm overseas so I can't just go and show him I'll have to talk him through. Whatever system he gets needs to be dead simple. It took him a year to start using his Mac because he would get too frustrated. But he does use it now.

From what he has said to me he wants basically the bass and drums some harmonies. Then my uncle will do some rhythm and Dad will do some Rhythm/Lead and vocals.

Any help would be great.

Removing tracks from a recorded track is not easy and typically does not result in good sound. You can buy backing tracks from places, or create your own (recording on a computer or stand-alone recorder), or use a device like this:

Your dad can call these people, tell them what songs, what instruments, and what order he wants them in. They can make a cd of the tracks and send it to him.

This guy posted the same question over at the acoustiguitarforum.com forums, with more info. Doesn't want to use a Trio-style pedal.
He might try the 'band in the box' software to create backing tracks, which to me is a pretty tedious process. Maybe the new BIAB sounds ok, but previous music I've heard with it sounds pretty lame. Ok for basic country songs with twanging guitar leads, I guess.

He might want to check out the iReal program . You can download sequences , or enter them yourself , it is really easy.There are a lot of free sequences on their forum. I throw about half of them away , but the others are good. They are free.
