They're not ear plugs.
They are in-ear monitor systems. Instead of having monitor wedges on the floor you have monitors in your ears.
I have custom-molded In Ear Monitors (IEM) just like the pros. I have a Shure PCM600.

Basically, for in-ear monitoring there are three parts:
1) The IEM - the part that goes in your ear. You can get non-custom fitted ear buds like this:

Or you can get custom fitted ones that are molded specifically to your ears. This is what I have. Mine cost $500. I got them from Starky.

2) The second thing is the wireless body pack. This is where you plug your IEM's into. You clip this on your belt.
3) The wireless receiver, which transmits the audio signal to the body pack you're wearing, and thus pipes the signal into your ears. The receiver gets its signal from an output off the mixing board. You need a mixing board with lots of AUX outputs so that you can send individual mixes to the various IEM receivers, this way everyone can get their own mix.
