When i lived in Cleveland there was a sax player that would play all night in downtown. You could hear him off in the distance... very movie-like. Played mostly show-tunes but he was a cool element on an early saturday morning at 3am after the bars closed. Was very cool.
I think the sax makes the closest sounds to the human voice.
Hearing someone play some old memphis bluesy open tuned acoustic fingerpickin style would be my favorite sounds though.
or some Mozart on the piano!

My favorite instrument to listen to varies by mood, but I always seem to enjoy Veena especially when played by S. Balachander .. http://youtu.be/GRYdQZo_L8A
Sometimes the Dan Bao hits the spot .. http://youtu.be/XqEryQNRzNg
... other times it's the good old Saxophone http://youtu.be/IjHyip0pCtY

You know IMO there isn't much difference between sax and guitar! We have been STEALING each others licks for YEARS!
Wow, I shoulda read this thread ages ago, it strokes my ego!
btw, I definately steal as many Stevie Ray Vaughn licks that I can get away with... don't tell anybody
Anyway, my fav instrument to listen to is a female vocalist. From Nina Simone to Madeleine Peyroux or Keren Ann, I love it. It's dope.
Here is my NEW second Solos cover video from last week:
