I'm stuck.

I want to play guitar with other people in a band, but I have no recent recordings that I want to use as a demo.

Need to record something new...besides my original stuff.

What should I record to demonstrate that I can play my instrument well? What songs should be covered? What songs should one avoid?

Something that shows off the full arsenal. Chords/ riffs/ leads, intros / outros, soft/ loud, strumming/ palm muting......

Unless you are strictly a 1-genre player, you should try to show the breadth of your abilities, like Schmed says.

If you're looking to get into a band, don't make them have to listen through an hour of recordings (on fast-forward).
Just record a bunch of parts of different songs: covers and originals both are okay.
What your prospective band is looking for is
- how well you play
- what you like to play.
So give them a variety . . . record snippets of your best stuff.
After that you've all got to decide if there might be any personality problems, (ego, drugs, booze, dependability, etc.)

Years back, when I was interviewing musicians and singers for a band, I used to ask them what kinds of music they liked, or what they'd be willing to do.
Most folks said they like almost everything, and would be willing to try almost anything. Yeah, so , all right . . . but that didn't tell me their preferences.
So I started asking folks what kind s of music do they HATE, and what kinds of stuff do they NOT want to play.
Asking THAT question stopped them from giving the easy answer, and started conversations.
And it told me a lot of what I needed to know for selecting the right musicians.

Dude, go with your original stuff and don't look back.

If you want to record a few solos (without a band) to show your ability that would work too. If I want to check out a player, the recording quality isn't as important as the level of musicianship that you associate with.
