A db meter is a great tool to use. Also a hand-held spectrum analyzer that allows you to walk around the room you're in and see which frequencies are elevated. You have to run a pink-noise generator through your PA in conjunction with the spectrum analyzer. There's no such thing as a room with perfect accoustics. Some part of the room might naturally magnify the highs , or mids, or lows. If you see some frequencies that are too high then adjust your equalizer accordingly.
